In a sieve add the puffed rice and wash it without pressure. Keep it in the sieve so any access water is removed. Set aside.
On medium heat, add add oil in a pan and add peanuts and fry until light golden. Remove in a bowl and set aside.

In the same pan and remaining oil add mustard seeds and cumin seeds once it starts fluttering add in curry leaves.

Add in ginger, garlic and green chillies. Sauté for few seconds and add onions, salt, chilli powder, lemon juice, turmeric powder and sauté for a minute.
Add tomatoes and mix. - 4
Finally add coriander and puffed rice and mix well. Turn off gas and do not over cook. Transfer in a serving bowl and garnish with coriander leaves and fine sev.
Serve with green chutney and tamarind chutney. 😉 - 5
