Ingredients

  • 1large Onion finely chopped
  • 1 teaspoonGinger-garlic paste
  • 1Medium-sized potatoes diced
  • 1 TeaspoonCoriander-Cumin powder
  • 1/2 TeaspoonGaram masala
  • 1/2 Teaspoonred Chilli powder
  • 1 CupLong grain Basmati rice washed and soaked for 1/2 an hour
  • 2Large Tomatoes roughly chopped
  • 1 handfulshredder Purple Cabbage
  • 1 CupsVegetable stock or water
  • 1 TablespoonTomato ketchup
  • 1/2 TeaspoonSugar
  • As per taste Salt
  • 2 TablespoonOlive oil/Vegetable oil+ 1 teaspoon more
  • As requiredSome cherry tomatoes to garnish

Steps

    Heat some vegetable oil in a pot over medium heat. Once hot, Saute the onions until they are light and translucent.

    Add in ginger-garlic paste and saute for few seconds.

    Then add in the diced potatoes and give it a nice stir, cook for 5 minutes.

    Add all the spices stir and combine well.

    Take the roughly chopped tomatoes and to a blender and blend to make puree.

    Also make vegetable stock by boiling some carrot, onion and green peas with salt,pepper and 1 cup of water.

    Add Tomato puree and vegetable stock to the pot with potatoes. Season it with salt and sugar and bring it to boil.

    Also add in shredded purple cabbage.Its just optional to use cabbage, you can omit it or can use other vegetables like peas, carrot etc.

    Then add the rice, give a good stir and bring to boil again.

    Turn the heat down to medium-low, cover and let it simmer until rice cooks completely.

    Before removing, fluff the rice with a spatula.

    Remove from heat and let it stand for 10 minutes.

    Serve this one pot rice dish warm with cucumber raita and pan seared cherry tomatoes.
