All-purpose Aloo Masala

This one is basically a multipurpose Masala for making umpteen number of dishes. Add a few Vegetables to it for a lovely variation like that of Green Peas, Fenugreek Leaves or Methi, Kasuri Methi or Dried Fenugreek, Spinach Leaves, Red Sorrel Leaves, Amaranthus Leaves, Spring Onions, Capsicum etc. With so many different options, the basic Masala still remains the same. Combine one of the above-mentioned with this to create a master dish. I have already made Parathas, Kachoris and Samosas with almost all of these thus experimenting in the process. And trust me people, you will love it all.
And making it is not at all difficult. You just need a few of the spices along with good grade of Potatoes.

Wash and clean Potatoes well before adding them to a Pressure Cooker along with Water as required. Also add a little of Salt and Milk as mentioned. Adding Milk prevents them from discolouration and also gives a nice flavour as well. Pressure cook for about 7-8 whistles or as required.

After the pressure settles down on it's own, take them out of the Cooker. Allow them to cool down a bit before peeling off the skin. Add them to a wide bowl or a plate. Mash them either manually or with a Masher.

Now comes the mixing part, there are actually two ways of doing it. Some people prefer to add their choice of spices or the ingredients directly to it like I have seen my Rajasthani neighbour doing it. You can do that. But if you are doing that then you need to skip all the powdered spices except the Garam Masala.

And now coming to my method of doing it, it's absolutely easy and simple. In about a tablespoon of Oil, saute Onions with Asafoetida and Ginger until translucent. Do not over do it. Let it be light pink in colour. See to it that the raw smell fades away. Then add the rest of the spices mentioned and eventually the mashed Potatoes too. Give it all a real good mix. Adjust Salt and that's it. You are all good to go. Use it in your favourite dishes as per your family's liking.
