Punjabi chole is a very famous main cuisine in Punjab. Its perfect combination is with kulcha, bhatura, paratha, puri, or pulav. It is full of protein.
Steps

Soak chana or chole overnight. Remove water. Add amla pieces, a pinch of soda & amla pieces. Pressure cook for 6 whistles. Amla pieces & tea bag is used to get dark color.

Heat oil in a pan. Add onion. Saute till it gets golden in color.

In the mixer jar, add tomatoes, green chili, ginger, garlic & cumin seeds. Make paste.

Add this paste to the onion. Saute for 8 to 10 minutes. Add cumin-coriander powder, turmeric powder, red chili powder, Kashmiri red chili powder & chole masala.

Add boiled chole, water, salt & kasoori methi. Cook for 15 minutes. Serve with kulcha, paratha, bhatura, puri, or pulav.
