Ingredients

  1. 1 cupsliced green or black olives (your choice)
  2. 1 cupcooked chickpeas
  3. 1 cupchopped parsley
  4. 1 cupmixed bell peppers, diced
  5. 1/2 cupsweet corn
  6. 1small red onion, thinly sliced
  7. For the dressing:
  8. 3 tablespoonsolive oil
  9. 3 tablespoonslemon juice
  10. Salt, black pepper, and cumin to taste

Steps

    In a bowl, combine all the salad ingredients.

    Season with the dressing ingredients listed above.

    Transfer to a serving dish and garnish as desired.
