Ingredients

  • 1 cupsliced green or black olives (your choice)
  • 1 cupcooked chickpeas
  • 1 cupchopped parsley
  • 1 cupmixed bell peppers, diced
  • 1/2 cupsweet corn
  • 1small red onion, thinly sliced
  • For the dressing:
  • 3 tablespoonsolive oil
  • 3 tablespoonslemon juice
  • Salt, black pepper, and cumin to taste

Steps

    In a bowl, combine all the salad ingredients.

    Season with the dressing ingredients listed above.
