Add a fancy touch to a salad or desert. Also, you can refuce the poaching liquid to use in a sauce or vinaigrette.

Combine wine, cinnamon and bay in a sauce pot over medium-low.

Peel and halve the pears, and scoop out the seed section with a spoon.

Submerge the pear halves in the hot wine. Simmer very gently for about 20 minutes.

Remove pears and chill. They've now taken on a nice color and flavor from the spiced red wine.

You can remove the cinnamon and bay from the wine and reduce it to a syrup. With some seasoning adjustment, this can serve as a sauce, or whisk in some honey, vinegar and olive oil to make a vinaigrette.
