Tea Flavored Mini Cakes with Strawberry Jam

I rearranged another recipe for cupcakes with tea leaves and strawberry jam using petite gateau molds.
I changed the amount of egg to 1/2, then it turns to a fluffy texture.
Adjust the baking time depending on the size of your mold and the oven. Recipe by Hokkori-no

Steps
- 1
Put the pancake mix, earl grey tea leaves, egg, sugar, honey and milk into a bowl to beat together.
- 2
Put the chopped butter into a heat proof container. Microwave for 30 seconds on 600 W to melt. Then add to the bowl.
- 3
Spread the vegetable oil onto petite gateau molds. Spoon batter into molds.
- 4
The batter will rise while baking, so only fill the molds up to 2/3 full.
- 5
Place strawberry jam on each piece.
- 6
Mix the jam with a toothpick gently to make a marble pattern.
- 7
Bake for about 13 to 15 minutes in the preheated oven at 170°C.
