Chicken and Pumpkin Curry

Ingredients

  1. 1/2pumpkin (we used kabocha squash)
  2. 1chicken breast
  3. 2 tablespoonsred curry paste
  4. 2 sprigsbasil leaves
  5. 2red chili peppers
  6. 2 tablespoonscoconut sugar
  7. 2 tablespoonsfish sauce
  8. 1small box coconut milk

Cooking Instructions

    Cut the pumpkin and chicken and set aside.

    Heat a pan and add half of the coconut milk. Add the curry paste and stir until it starts to separate slightly.

    Add the chicken and stir until the chicken is cooked, then add the pumpkin.

    Pour in the remaining coconut milk and some water.

    Season with coconut sugar and fish sauce. Continue to simmer until the pumpkin is cooked.

    Once the pumpkin is cooked, turn off the heat and add the basil leaves and sliced red chili peppers.
