Spaghetti with Bolognese Meat Sauce
Bolognese sauce is a popular and simple sauce among Italian-style pasta sauces. This recipe is common except for the first step, which is a family secret. This step creates a natural sweetness for the sauce from fried onions, so if you want to save time, you can skip it.
Cooking Instructions
- 1
Slice 1 onion and add to a pan with olive oil over medium heat until golden on the edges.
- 2
Prepare ingredients:
➡️ Chop carrot, onion, garlic, basil leaves, and tomatoes.
➡️ Reserve basil tops for garnish. - 3
When the onions in step 1 are golden, add garlic and chopped onion, sauté until fragrant, then add carrots.
- 4
Sauté for 1 minute, then add ground beef, breaking it up to avoid clumps.
- 5
Once the beef is broken up, add milk to just cover the meat. Add half a bouillon cube if needed, but usually, just salt is enough for the natural sweetness of the ingredients. Stir and cover for a few minutes over medium-low heat.
- 6
After a few minutes, when the milk has reduced, add tomatoes, bay leaves, basil leaves, dried parsley, and half a cup of red wine to the pan. Then add the tomato paste, mix well, cover, and cook on low heat for 30 minutes or until the desired thickness is reached.
- 7
After cooking for 20 minutes, bring a pot of water to a boil and cook the pasta for 8-10 minutes, depending on the type. Drain and place on a plate while still hot.
- 8
On the plate of hot pasta:
➡️ Add shredded Emmental cheese
➡️ Add a layer of Bolognese sauce
➡️ Add grated Parmesan cheese
➡️ Garnish with fresh basil leaves and sprinkle with ground pepper.

Sweet Savoury Pasta Meat Sauce Kid-Friendly (Bolognese) Sweet Savoury Pasta Meat Sauce Kid-Friendly (Bolognese)
Here in Manila we love our spaghetti a bit sweetish and very saucy. 😋 So both the kids and kids at heart love it.This was gone after the first two sets of guests arrived! Spaghetti is always a crowd pleaser in gatherings here. You can use your favorite pasta on this too.Sweet tomato / spaghetti sauces are readily available in our supermarkets in Manila. If there aren't any in your area, just add brown sugar to adjust the sweetness. :) I still use fresh tomatoes when making pasta sauce, as it enhances the flavor (which is not common practice here). My rule is, don't just open something and heat it, always add to it and make it your own! 😊 I also combine different types/flavors of the tomato/spaghetti sauces, because it makes the end result better and tastier.
