    Pat the pumpkin seeds dry with kitchen paper.

    Heat plenty of Extra Virgin Olive Oil from Spain in a frying pan.

    When the oil is at smoking point, add the pumpkin seeds and fry until they are golden brown. Have a frying pan cover to hand as they may pop and spit as they open.

    Remove the seeds with a slotted spoon and leave to drain on absorbent paper.

  5. 5

    Season to taste.
