Sweet Potato Boats with Cream Cheese Sauce with Mint and Lime

I saw this recipe on Lifo and made it with some variations!!
I was looking for something to do with leftover sweet potatoes!!
Personally, I hadn't worked much with sweet potatoes and realized I was missing out!!
Fantastic taste, especially combined with ground beef and cheese, it's AMAZING!!
The only thing to watch out for is baking the potatoes, which takes a while but is worth it!!
Cooking Instructions

Wash, trim the ends, and peel the potatoes if desired, but they can be cooked with the skin on!!
Place on a baking sheet covered with coarse salt or just on parchment paper and bake at 400°F until soft!!
If they are large, you can cut them in half, and they need 1-1.5 hours of baking until a knife goes through easily!!

Start making the ground beef!!
Heat oil in a wide pot and add onion and garlic, salt to taste, and stir occasionally until they are sautéed!! - 3
Add the ground beef and stir until each piece changes color!!
Add the diced tomatoes, herbs, and stir!!
Gradually add the tomato paste, cinnamon stick, and bay leaves!!
Finally, add the nutmeg!! - 4
Cover with a lid and cook on medium heat for about 20 minutes!! If needed, add water until the ground beef is tender!!

When the sweet potatoes are baked, fill them with spoonfuls of the ground beef!!

Place back in the oven for 15 minutes!!

Make the cheese sauce!!
Place all the ingredients in a bowl after finely chopping the mint!! Mix well with a spoon!! - 8
Spoon over the ground beef on all the potatoes!!

Place back in the oven on convection for 10 minutes!!
