Griddled Italian Pork Loin Sandwich (Jon Style)

This classic Chilean sandwich is usually made with a whole pork loin cooked in its juices for about 70 minutes, then sliced. But if you want a sandwich right now for a couple of people, why not make it griddled, Jon Style? When I make sandwiches of any kind, I like to put the meat on top of everything else so I can season it a bit more at the end if I want. I seasoned the avocado to my taste, but you can keep it simple with just salt and pepper.
Griddled Italian Pork Loin Sandwich (Jon Style)
This classic Chilean sandwich is usually made with a whole pork loin cooked in its juices for about 70 minutes, then sliced. But if you want a sandwich right now for a couple of people, why not make it griddled, Jon Style? When I make sandwiches of any kind, I like to put the meat on top of everything else so I can season it a bit more at the end if I want. I seasoned the avocado to my taste, but you can keep it simple with just salt and pepper.
Cooking Instructions

Season the pork loin with the listed seasonings. If making homemade mayonnaise, refrigerate it until ready to use. Mash the avocado and mix in the other ingredients. Remove the seeds from the chili pepper and slice it into strips.

Slice the tomato. Wash the lettuce leaf if using. Slice your preferred bread roll in half.

Heat a metal griddle well and cook the pork loin on both sides. Warm the sliced bread. Spread the mashed avocado on both sides of the bread and mayonnaise on the top half. Place lettuce and tomato slices on the bottom half.

Add the cooked pork loin and chili strips. Secure with toothpicks and cut the sandwich in half.

I served it with cooked corn sticks.
