Korma originated around the 16th century during the Mughal Empire's reign in the Indian subcontinent.

There are multiple variations of this dish that each region and family has adapted to their taste over hundreds of years.
In the northern part of the country, for example, they usually prepare a white and mildly spicy korma, while in the south, they prefer a very spicy and red korma.

A dish that will undoubtedly please any palate, no matter how delicate.

Ingredients

  • 14 ozchicken breast
  • Marinade
  • 2 clovesgarlic
  • 1small piece ginger
  • 4peppercorns
  • Cilantro
  • 1 teaspoonturmeric
  • 1 teaspoongaram masala
  • 1Greek yogurt
  • Salt
  • Sauce
  • 1onion
  • 1 clovegarlic
  • 1small piece ginger
  • 2cloves
  • 1cinnamon stick
  • 1/2 teaspooncumin
  • 1 teaspoonpaprika
  • 1/2 teaspoonground cilantro
  • 1 teaspoongaram masala
  • 1 cancoconut milk
  • 1 cancrushed tomatoes
  • 1 cupchicken broth (250 ml)
  • Chili pepper (to taste)
  • Cashews, peanuts, or almonds
  • 1/2lemon
  • Olive oil

    In a blender, place the two cloves of garlic and the ginger (both chopped) along with the peppercorns, cilantro, salt, some cashews (or peanuts), and a little water to help blend.
    Blend until you achieve a paste as smooth as you like.

    In a container or ziplock bag, place the chicken pieces along with the blender paste, Greek yogurt, and teaspoons of turmeric and garam masala.
    Let marinate for at least 2 hours (or better, overnight) so the chicken absorbs all the marinade flavors.

    In a skillet or wok, add a little oil.
    Add the chopped garlic and ginger, cloves, cinnamon, and chili pepper, and sauté until they start to release their aroma.
    Traditionally, 2 green cardamom pods are also added, but I didn't have any on hand.

    Slice the onion into thin strips and add it along with the paprika, cumin, and ground cilantro.
    Mix and sauté until the onion starts to brown.

    Add the marinated chicken pieces (including the marinade).
    Sear and brown them on all sides with the other ingredients.

    Add the coconut milk (or coconut cream), broth, and crushed tomatoes.
    Cover the skillet or wok and let it cook on low heat until the chicken is tender and the sauce has thickened.
    This may take some time, but it will be worth the wait.

    Taste and adjust the salt if needed.

    Remove the wok or skillet from the heat, add an extra teaspoon of garam masala to enhance the flavor of the stew, and finish with the juice of half a lemon.

    Serve the dish with boiled basmati rice as a side.

  10. 10

    Add the nuts (cashews are traditional, but peanuts or almonds can also be used) and a bit of fresh chopped cilantro. All to taste, of course.
