Clean, wash and cut the chicken breast in bite size cubes. Drain out all the excess water. Heat up oil in a pan then add the chicken and cook till it changes colour and become white. It takes 4-5 minutes then add all the spices mentioned above along with ginger garlic paste. Mix well and cook on mexium high heat. The chicken breast is very tender and it takes hardly 10 minutes to be completely done.

Once chicken is totally done add the frozen mix veg to it and saute well. Again cook it till it completely done and the oil oozes out. If you are using fresh vegetables then dice it and cook it for a longer period of time as fresh veggies take more time to be completely done. Once done and oil oozes out then transfer it to a bowl. You can store this veggie chicken mix in the refrigerator for 2-3 days and in the freezer for upto a week. You can have this as it is with roti or paratha.

Now beat the egg with salt and pepper and in the same pan and same oil in which we had cooked the chicken add the beaten eggs and scramble it. Then take it out in a bowl by this we will have the flavour of spices in every ingredients. Now cook the rice adding salt upto 80%. Don't fully cook it else it will break while mixing with chicken, veggies and eggs. Once cooked keep it aside. Now all the preparations are done. Let's mix all the things for thst take a big wok and heat up oil in that wok.

Once heated add the onions and saute it. Add salt to it remembering that we had added salt in everything. Then add ginger and garlic paste and chopped green chillies and cook till the rawness of ginger and garlic goes away. Then add half of the cooked rice and on it add the cooked chicken and veggies mix them. Then add all the remaining rice and add soy sauce and red hot chilli sauce and mix very well. Then add the scrambled eggs and chopped spring onion whites and greens to it and mix very well

Cook it for 4-5 minutes on low heat and it's done. Serve it hot as it is or with yoghurt or chaach or any dip or chutney of your choice. Make it and enjoy it with your loved ones.
