If you don't have buttermilk add 1 tsp vinegar or 1 tsp lemon juice in 250 ml milk leave it for 5 minutes then mix well and buttermilk is ready.
If you don't have brewed coffee then add 2 tsp of coffee powder in 250 ml of hot water mix and leave it for 5 minutes and it's ready to use.
If you don't eat eggs then add 4 tbsp yoghurt of 4 tbsp buttermilk in place of 1 egg. - 2
Use each and every ingredients of sponge cake on room temperature. Measure ingredients properly and sieve all the dry ingredients. First let's make buttermilk and brewed coffee like the way which I wrote above. Then keep it aside. Now sieve all the dry Ingredients and mix very well and keep it aside.

In another bowl break the eggs and whisk it when start to become foamy add sugar and whisk till all the sugar melts. Then add the buttermilk and whisk again until well incorporated. Then add the coffee mix and whisk again until it mix up well. Now slowly add the dry ingredients in the wet ingredients and start mixing. Don't over mix it simply mix to merge the wet and dry ingredients and nothing is left.

Then add the oil to the batter and mix again well. The batter will look shiny and thick in consistency. Grease a baking dish with oil generously and pour the cake batter in it. Tap it for 3-4 times. Now bake it in a preheated oven for 35-40 minutes. Do a toothpick or knife test to see if it's done. When completely done take it out of the oven.

Now allow it to completely cool down. It takes somewhere around 30 minutes to an hour depending on the weather condition. After 10 minutes run a knife along the edges and demould it. Now keep it on a cooling rack to completely cool down meanwhile let's make the icing for that start whipping the cream in a big bowl with an electric beater starting on a low speed then slowly making it to higher speed adding sugar and vanilla essence. Once reached the soft peak add the cocoa powder and whisk again

Whisk till it reaches the high peak. It takes 10 in all total. Now cut the cake in 3 equal layer 2 cuts and 3 layer will be done.now add a big dollop of cream on the lower part of cake and spread evenly. Add the cream generously then do the same process on all the 3 layers and spread evenly. Then coat the sides of the cake with the cream. Once coated every where keep it in the fridge for 30 minutes. This first coating is called crumb coating.

After 30 minutes add more cream to it znd flatten it. Spread and flatten it evenly from all sides and from the top. Now add the kitkat chocolate on all over the sides. Then melt the chocolate with milk jn microwave for 30 second and mix it very well. Now pour this glaze on top of the cake and make a swirl on the top of the cake with a toothpick or knife or fork. Then again keep it in the refrigerator for an jour then serve.

You can decorate it the way you like. Make it once and you are gonna love this.
