Ingredients

  1. 1onion, chopped
  2. 3 tablespoonsbutter
  3. 5celery stalks, chopped
  4. 2eggs
  5. 1 tablespoonWorcestershire sauce
  6. 1/2 cupbread crumbs
  7. 1/2 cupchopped parsley
  8. 1/3 cupGreek yogurt
  9. 1/2 teaspoondried thyme
  10. 1/4 teaspoondried marjoram
  11. Kosher salt
  12. Ground black pepper
  13. 2 poundsground beef, 85% lean
  14. 1/2 poundsweet Italian pork sausage
  15. 1/2 poundground veal
  16. 1/4 cupsweet chili sauce

Cooking Instructions

    Sauté onion in butter for 5’.

    Add celery and sauté until onions start turning color. Transfer to a large bowl and let cool.

    Preheat oven to 350F. Line a rimmed baking sheet with aluminum foil and parchment paper.

    In a small bowl whisk eggs with Worcestershire sauce.

  5. 5

    Add bread crumbs, parsley, yogurt, herbs, salt, pepper and the egg mixture to the onions. Mix well.

    Add meats and mix with hands.

  7. 7

    Move mixture to prepared sheet and form into a loaf. Brush with sweet chili sauce. Cover loosely with aluminum.

    Bake for 45’. Remove foil. Continue baking till internal temperature reaches 168F. Remove from oven. Slightly tilt pan to collect fat on the side and let rest for 15’ before serving.
