Samak Ki Phirni

Wash Samak chawal and let it soak in water for 15 minutes. Strain the water and dry the rice on a soft cotton cloth for around 30 minutes.

After 30 minutes (when it has dried properly), grind it and make a fine powder. In 100 ml MILK, add this powder and mix it in well.

In a heavy bottom pan, heat 900 ml MILK. Add the Samak Chawal Mixture into the 900 ml boiling milk.

Add saffron and stir it continuously. Once it thickens, add SUGAR, and cook for another 2-3 minutes. Turn off the stove and add KEWRA ESSENCE.

Pour in serving bowls and garnish each bowl with chopped nuts (pista, almonds). Let it set in the fridge and serve chilled.
