Peel the potatoes and cut into small cubes. Place in cold water

In a non-stick pan, heat oil enough to cover the potatoes

As oil heats up, pat the potatoes dry.

Add potatoes to the hot oil, let it cook for 15-20 min or until cooked, over medium heat

In a small pan sautè the onions together with ginger, garlic and salt. You can add other spices if you wish to. Once cooked remove from heat and let it cool

Once potatoes are cooked, remove from oil, place in a strainer and let it cool down as well as get rid of excess oil.

Break eggs into a large bowl.Add in coriander, onion and potatoes. Stir to mix

Using the same pan used to cook potatoes,remove, leaving about a teaspoon or enough to cover the pan.

Heat the pan,adding the eggixture and cook over low heat for about 5 min or until cooked.

Run spatula around d the edges to check if it is cooked

Once the bottom is cooked place a large plate on top of the pan and flip quickly.

Slide it back to the pan, uncooked side down. Let it cook.

When fully cooked, slide it onto a plate and allow to cook before eating.
