Family and friends can't get enough of this deconstructed sushi favorite adapted for dipping. (You can also serve it over sushi rice or regular steamed rice and make a rice bowl meal of it. It's good for 2 or 3 servings that way.)

So easy to make and perfect for those holiday parties and potlucks coming up!

If you don't have surimi (artificial crab), you can substitute with peeled and precooked shrimp (the smallest size you can find), thawed and thoroughly drained. Of course real lump crab, thoroughly drained, is worth the splurge if you can swing it. ;)

Ingredients

4 to 6 as app
  1. 1/2 poundsurimi (artificial crab), completely thawed, water squeezed out, and chopped
  2. 1Persian cucumber (1 pickling or 1/2 an English/Hothouse, seeded are ok)) diced, excess water squeezed out - See Step 1
  3. 1large ripe avocado diced
  4. 3 Tablespoonsvery finely chopped onions
  5. 1/3 cupmayonnaise (I like Best Foods/Hellman's)
  6. 1/2 teaspoonsugar
  7. 1 pinchsalt
  8. 1 Tablespoonlemon juice

Cooking Instructions

    To squeeze excess water from cucumbers, dice them first, toss with 1/4 teaspoon of salt, and let sit for 15 to 20 mins. Then with clean hands, grab a fistful and squeeze to remove excess water. Set aside in a mixing bowl and repeat with the rest of the cucumber.

    Add the rest of the ingredients into the mixing bowl and gently fold together until thoroughly combined. In these kinds of preparations, I like to sprinkle things like salt and sugar over the entire surface area because it's much easier to make sure they get evenly incorporated into the recipe that way.

    Serve with crackers, pita, tortilla chips, or as a vegetable dip.
