Choctaw Tomato Sauce Colcannon (Kowi Pakanli)

This colcannon, uniquely Choctaw, uses asparagus (or green beans) instead of cabbage or kale. I added knackwurst sausage. “Kowi Pakanli” translates to “forest flowers”.

This colcannon, uniquely Choctaw, uses asparagus (or green beans) instead of cabbage or kale. I added knackwurst sausage. “Kowi Pakanli” translates to “forest flowers”.
Steps

Dice up sausage and green veggies, then add to pot of tomato sauce. Use medium heat.

Simmer the sausage and veggies, until the veggies are a bit soft. Turn off heat.

Cook potatoes in microwave. Poke holes before cooking potatoes, too.

After potatoes are cooked, scoop out flesh - into a large bowl. Save skins as a healthy snack.

Mix in sausage mixture, add desired seasonings, and mix.

All done! Serve with ham, turkey, or trout.
