Take a pan add oats and roast for 2-3 minutes. Transfer into a plate.in the same pan heat oil add mustard seeds,cumin seeds and curry leaves. When they splattered add chopped onion and green chillies.add peanut and saute till the onion turn light pink.

Add all the veggies. Saute and cooked for 3-4 minutes. add salt and pepper powder, when tomato turn soft add roasted oats and water mix well. Cover and cook for 3-4 minutes. switch off the gas. Leave it for 2 minutes

Open the lid.add coriander leaves mix and the healthy oats upma is ready to eat.
