California Farm Preserving Lemons

The crop of lemons is coming in. One large glass jar is sufficient to hold a years supply of preserved fresh lemons for cooking. You simply quarter a lemon lengthwise and stuff inside the jar with a pinch of salt. The salt will draw out the lemon juice which will preserve the lemons.

Cooking Instructions

Soak lemons overnight in cold water. Quarter, put single layer on bottom of jar. Sprinkle little seasalt, as if salting an egg, another layer on top, skin down. Fill jar. After a few days, lemons will release the lemon juice and shrink. Add new layers daily till lemon juice covers the lemon quarters. When cooking, rinse the lemon quarters. Enjoy.

This one is fun. A pound of Lemon grass stalks and leaves contain two teaspoons of strong, pungent, pure lemon grass oil, one teaspoon is released in oil which flavors a full cup of mild grapeseed oil, turning it into fragrant lemon grass oil for cooking, stir frying, massage, and aromatherapy. The stalks retain the other teaspoon of oil and flavors for cooking. Stays fresh for two years without turning rancid, gets stronger every month from stalks left in bottle and jar.
