Ingredients

20 mins
4 to 5 people
  • 8 - 10 Chicken pepperoni slices around 150 grms
  • 150gmChicken sausage around s (3to 4 pieces of 4 inch size)
  • 5-6Pitted black olives
  • 5-6Stuffed green olives
  • Mint sauce
  • 1/2 cupMint around
  • 1/2 cupCoriander leaves
  • 3 - 4 table spoonsGarlic mayonnaise around
  • 1-2Green chilli as hot you prefer
  • 3 table spoons,Olive oil around
  • to tasteSalt
  • To shallow fry pepperoni and sausage
  • 2table spoons of oil
  • To make the skewers
  • 10 - 12 Tooth pick around

Steps

  1. 1

    Take number of slices of Pepperoni required I used around 10, and number of pieces of sausages required I used 3.

    The sausages are cut into 4 pieces and then each piece is slit 3/4 of the length as seen in the video

    The pepperoni slice is also cut just 1 side as seen in picture

    Shallow fry both the pepperoni and sausage 2 to 3 mins each side

    Remove from the tawa and allow it to cool for few minutes

    Mean time,for the mint sauce, grind the mint, coriander and green chilli coarsely, transfer it to a bowl, add 3 table spoons of garlic mayonnaise, 3 tablespoon of olive oil and mix it well and keep. And used 6 pitted black olives, stuffed green olives, cut it into half and was set to prepare the skewers

    Join the pepperoni at the cut end as seen in video and insert the tooth pick, put some 1/2 teaspoon of mint sauce in the centre, then insert the sausage and olive oil as seen in video

    Once inserted, plate it and can serve warm or cold as a starter, appetizer or as a side dish along with mocktails or cocktails

Food is necessity, But Cooking is an art. Always was passionate but lockdown made me a specialist. Grow organic and cook artistic is the mantra I follow. Retired at 50 , 55 now, have my own terrace garden where I grow some of the colourful exotic vegetables and fruits. I love playing with colours when it comes to food plating, but no artificial colours only with natural available edible vegetables and fruits.
