[Silken Tofu] Stir-Fried Mizuna Greens

I though it would be nice to make sweet stir-fried vegetables, so I came up with this recipe.

Use plenty of mizuna greens, if you like! If the frying pan is overflowing with mizuna greens, cover with a lid after adding the leafy part, wait for one minute, then they should be easier to stir-fry ♪

Carrot will make the dish more colourful! Recipe by Fukita nochieko

Ingredients

1 serving
  • 1 bunchMizuna greens
  • 1/2 blockSilken tofu
  • 1 bunchShimeji mushrooms
  • Seasoning ingredients:
  • 1 tbspSake
  • 1 tspSugar (light brown sugar)
  • 1 tbspMentsuyu (3x concentrate)
  • 1 dashSalt
  • 1 tbspSesame oil (for stir-frying)

Steps

  1. 1

    Microwave the silken tofu without covering for 2 minutes! Let it cool, and discard excess moisture.

  2. 2

    Cut the mizuna leaves into 5 cm pieces.

    Heat the sesame oil in a frying pan, add the stem of mizuna greens first, then crumble the tofu into the pan. Add the shimeji mushrooms. Stir-fry the ingredients in the pan.

    Once they are coated with oil, add the leafy part of mizuna greens. Season with the sake and sugar, and stir-fry until tender.

  5. 5

    Once the greens are tender, add the mentsuyu and salt. Stir-fry until moisture in the pan cooks off.

  6. 6

    You can make side dish for two people from one bunch of mizuna greens.
