Gajar Ka Halwa (Carrot Halwa Recipe)

Gajar ka Halwa is everyone's favorite sweet dish during the winter season, but everyone has their own way of making it. Cooking Instructions

First, peel the carrots with a knife to remove the fibers. Then wash and grate them. Heat the milk.

When the milk comes to a boil, add the carrots. Cook on medium to high heat. Leave the spatula in the pan so that if you step away from the stove for a moment, it won't boil over. As the milk reduces, scrape the sides of the pan with the spatula.

When the milk has dried up well, add the ghee, but keep about 3 tablespoons of ghee in the bowl. After frying on low heat for 3-4 minutes, add the sugar. Once the sugar melts, add chopped cashews and almonds. Add washed raisins as well.

Now fry the carrot halwa until the sugar syrup dries up. Check by moving the halwa aside with the spatula. If no liquid is visible, turn off the heat; otherwise, fry a little longer. After turning off the heat, mix in the remaining ghee.

You can serve it after 10 minutes. Store any leftover halwa in the fridge and mix a little ghee before reheating to serve again. This enhances the flavor.
