Presenting a popular and an adorable savoury of any Bengali home called GHUGNI.
GHUGNI is a preparation out of dried white / yellow peas ( matar ) which is the base ingredient along with few basic condiments but as I could grab fresh green peas as we are in the mid of winter and available in abundance, so prepared Ghugni with green peas 😊.
It is the most liked snack or side dish in any Bengali household which actually needs no introduction.

Steps

Finely chop onion + garlic and roughly chop tomatoes

Pressure cook peas under 2 whistles, don’t overcook and let pressure release by itself.

Make a paste of tomato + ginger + green chilli and keep aside.

In moderately heated pan, add 2-3 tbsp mustard oil, add cumin seeds and allow to crackle. Add onion, sauté for few seconds then add garlic and sauté till onion turns translucent and garlic turns brownish. Then add 1/2 ladle of boiled peas + tomato paste +all dry spices and stir fry till spices leaves oil and turns aromatic.

Now add peas and sauté for 2 minutes and then add 1 - 1.5 cup warm water and give 3-4 times nice boil. Lastly add sugar + chopped coriander and check for salt also and simmer for 3-4 minutes.
Gravy consistency is as per preference. - 6
Now peas curry is ready. Garnish with coriander.
