Ingredients

  • 1 litrefull cream milk
  • 2 tbspvinegar
  • 1/2 cuplukewarm water

    Heat milk in vessel and let it come to boil. Now take half a cup of lukewarm water, add 2 tbsp of vinegar in it. Mix it and keep this mixture aside. Now let the milk boil for about 5 mins. Then add little my little of the vinegar mixture and mix it gently. Repeat the process until the milk curdles completely.

    Now strain the excess water over a strainer and wash the chena gently with cold water with the help of your fingers. Doing this will help in removing the sour taste of vinegar from the chena.

    Now take a muslin cloth, pour all the chena over it, make a potli kind with it and press the chena gently so that all the excess water from the chena gets removed. Refer to the image below.

    Now press the chena gently to get a desired shape of paneer (refer to the image below). Now keep a heavy stone-kind (for grinding) over the chena so that the excess water gets removed from it and the chena becomes compact and gets the shape of paneer. Donot lift or move the stone in between; let it stay as it is for at least 1.5 hours so that the paneer sets properly.

    NOTE : More than 1.5 hours is not required otherwise all the moisture from the paneer would get lost and it will taste like a rubber and would turn hard.

    Now after 1.5 hrs. remove the paneer from the cloth and you will get a perfect texture of paneer as required for your dishes. Now cut them as per your desired shape.

    NOTE : If you are using the pa neer for the next day then let the paneer dipped into the water, cover it and keep it into the refrigerator then use it as required.

    NOTE : For making paneer you can also use lime insted of vinegar; the process would be the same but you need to strain the lime-juice first to remove the veins and seeds of the lime; then add it with lukewarm water.
