Green eggs, no ham

I was inspired by Saina's kookoo on Cookpad but didn't have ingredients to make it, so I threw this together. The nuts in the pesto add a lovely aroma.

I was inspired by Saina's kookoo on Cookpad but didn't have ingredients to make it, so I threw this together. The nuts in the pesto add a lovely aroma.
Cooking Instructions

Whisk eggs in a bowl until well blended

Add pesto and whisk until blended
- 3
Add greens to egg mixture and stir to blend
- 4
Add olive oil to pan over a medium fire. When oil has coated bottom, pour in egg mixture and salt to taste.

After 5 minutes, use a spatula to turn half the omelette onto the other half.

Turn fire down to medium low and cover with a lid.

Cook another 5-8 minutes until the eggs have set but the texture is still soft and moist.

It's really good toasted, too.When using a loaf with 8 (thin) slices, the amount of mayonnaise and ketchup shown in the photos is just right.When using a loaf with 6 (thicker) slices, add a bit more. My husband loves this ham and egg sandwich.He often brings this to the office.The egg is cooked for 15 minutes so the yolk is hard-boiled. If you prefer it soft-boiled, please reduce the cooking time.If you cut the crusts off the bread, keep the egg mixture about 1cm away from the edge.
