I was inspired by Saina's kookoo on Cookpad but didn't have ingredients to make it, so I threw this together. The nuts in the pesto add a lovely aroma.

I was inspired by Saina's kookoo on Cookpad but didn't have ingredients to make it, so I threw this together. The nuts in the pesto add a lovely aroma.

Ingredients

10-12 minutes
3 servings
  1. 3large eggs
  2. 6 ouncesgreens chopped fine (I used baby escarole)
  3. 1/4 cuppesto (I used parsley walnut pesto)
  4. 2 teaspoonsolive oil
  5. Salt to taste

Cooking Instructions

    Whisk eggs in a bowl until well blended

  2. 2

    Add pesto and whisk until blended

  3. 3

    Add greens to egg mixture and stir to blend

  4. 4

    Add olive oil to pan over a medium fire. When oil has coated bottom, pour in egg mixture and salt to taste.

    After 5 minutes, use a spatula to turn half the omelette onto the other half.

    Turn fire down to medium low and cover with a lid.

  7. 7

    Cook another 5-8 minutes until the eggs have set but the texture is still soft and moist.
