Ingredients

1 serving
  • 2 mediumEggs
  • 1 bunchKale (1 Leaf)
  • 5 tbspOnions (chopped)
  • 1 cloveGarlic (chopped)
  • 5Green Olives (sliced)
  • 10Capers (more or less to taste)
  • 3Anchovies (more or less to taste)
  • 6 sliceWhite Cheddar Cheese (sliced thin from a block.. I find this helps keep the scramble together better then shredded cheese)

Steps

  1. 1

    Saute onions and garlic in butter for a few minutes and then add kale and olives. Continue to saute until kale is dark green and soft.

  2. 2

    Add scrambled eggs (I put milk, pepper, and parsley in the eggs when I scramble them). Cook for a couple of minutes and then add chopped anchovies and capers.

  3. 3

    When eggs are just about done put the sliced cheddar cheese on top and cover pan to melt. Then serve.

  4. 4

    *Note* You can add more or less ingredients to taste but don't underestimate the natural saltiness of the olives, capers, and anchovies.
