A great way to get your greens + protein “on the go” in the morning. Toddler approved : )

Ingredients

  1. 1 packagefrozen hashbrowns (defrosted)
  2. 1 lbground breakfast sausage (or diced ham)
  3. 8eggs
  4. 1 cupshredded cheese
  5. 3 handfulsbaby spinach (blend in food processor or finely chop)
  6. 3 tbspbutter (melted)
  7. 2 tbspmilk
  8. 1/4 tspsalt
  9. 1/4 tsppepper
  10. Mrs braggs herbs (optional)

Cooking Instructions

    Heat oven to 400. Spray muffin tin with olive oil.

    Mix butter with hashbrowns and divide evenly between muffin tins. Press hashbrowns down and up sides. Bake until slightly browned (15 min)

    Brown sausage and divide on top of hashbrowns cups.

  4. 4

    Whisk eggs, milk, spinach, salt, pepper, 3/4 cup cheese & seasonings. Divide over muffin cups. Sprinkle with remaining cheese.

    Bake for 12-15 min.
