Serves 4 servings
  • 4telera or bolillo rolls
  • 1 lbOaxaca cheese (about 500 grams)
  • 1 lbchorizo (about 500 grams)
  • 2avocados
  • 1small white onion
  • 3tomatoes
  • 1lime
  • Pickled chiles, to taste

Steps

20 minutes
  1. 1

    Cook the chorizo in a skillet over medium heat for 10 to 15 minutes, then remove from heat.

    Slice the rolls and squeeze a few drops of lime juice on both the top and bottom halves.

  3. 3

    Slice the tomatoes, avocados, and onion.

  4. 4

    Layer the tomato and onion slices on the bottom half of each roll. Add the chorizo and Oaxaca cheese on top, then finish with avocado slices.

  5. 5

    Close the sandwich and heat in the oven or a skillet briefly, just until the cheese melts.
