We love this recipe! It's even better with seasonal vegetables, but you can use whatever you have on hand!
Cooking Instructions

Prepare all the ingredients before you start.

Pour olive oil into a large pot and add the onions, garlic, and bell peppers. Sauté until softened.

Add the eggplant and continue to sauté.

Add the zucchini and sauté again.

Add the peeled tomatoes, salt, pepper, sweet paprika, and mild chili powder. Add a little sugar to balance the acidity of the tomatoes.

Add the tomato puree and bouquet garni. Cook everything together for about 12 minutes.

It's ready! Serve with grilled chicken or white fish.
