Taiwanese Hakka Style Flat Rice Noodle Soup (客家湯板條) - Gluten Free Noodle Soup

About 15% of Taiwan’s population is the Hakka or Ker Jia people and they are known to have a solid and unified community with many wonderful and distinctive culture. One of the famous hakka food known is Ban Tiao which is Flat Rice Sheet cut up into strips. Ton Ban Tiao is the soup version of this flat rice strips. In this video, I will show you how Ton Bao Tiao is made. Since it is made of flat rice noodle, it is also gluten free.

Steps

Soak dried shiitake mushrooms with 2 cups of water for 30 minutes to 1 hour.

Thinly slice reconstituted mushrooms, pork, and shallot.

Cut Chinese chives to about 1-1/2 inches long. Clean bean sprouts under water and set aside.

In a frying pan add 2 tablespoons of cooking oil. Then add shiitake mushrooms and sauté until fragrant. Add shallot and sauté with medium high heat until fragrant. Add sliced pork and cook until the meat is no longer pink. Add 1 tablespoon of soy sauce and then take out and set aside.

In a pot, add water and bring it to a boil. Then cook flat rice noodles as directed on the package. When cooked, take out and place it in a noodle soup bowl.

Blanch Chinese chives and bean sprouts.Then take out and place them on top of the cooked flat rice noodles.

In a pot, heat up your soup stock and add salt as needed. When it’s ready, ladles to the noodles.

Add cooked pork/mushrooms/shallot mixture on top of the noodles. Add about 2 to 3 tablespoons full of this mixture. Serve warm and enjoy.
