My family LOVES picadillo (meat & potatoes in tomato sauce), but I had to find a way to make it lighter for us, so I created this recipe. If you are using Noom like I am, this recipe is all GREEN except for the ground turkey (yellow).

Ingredients

  1. 1 candiced tomatoes, undrained
  2. 1 lblean ground turkey
  3. 1 cangreen beans
  4. 3red potatoes with skin
  5. 2 tbspminced garlic
  6. Seasonings I used (estimates - I don't measure)
  7. 1/4 tspBlack pepper
  8. 1/2 tspGround Cumin
  9. 1/2 tspGarlic Powder
  10. 1 1/2 TbspKnorr Tomato Bouillon with Chicken Flavor (see note)
  11. 1/4 tspred chili powder

Cooking Instructions

    Dice red potatoes into small, thin cubes.
    Sautée in large non stick skillet. (I used non stick spray instead of oil/butter). Season potatoes with garlic powder & pepper.

    When potatoes are mostly done, soft but still slightly firm, add your turkey and cook until brown.

    When turkey is done, add in your diced tomatoes with juices & minced garlic. Stir well to cover all potatoes and turkey. Season well with remaining seasonings.

    **I use the Knorr Tomato Boullion instead of salt for this dish. It REALLY brings the flavors together, so I'd definitely recommend it in place of salt. If you can't find it, salt works just as well. It can be found at Walmart, Meijers, some Krogers (not all), and any Mexican Supermarket**

    Add in drained can of green beans and stir.

    Cover and simmer on low for 5-10 minutes for potatoes and green beans to finish cooking.

    Enjoy alone or on top of rice/quinoa
