Steps
- 1
Sieve flour, baking powder, salt in a dry bowl and add your powdered nutmeg
- 2
Use your blender to blend the overripe plantain (after peeling),sugar, apple cider, egg, milk, fresh peppers together to make a smooth batter
- 3
Add your chilled water into the flour mixture (add half cup first) and stir thoroughly until mixture is like the plantain batter and without seeds.
- 4
Put in the plantain batter and mix it thoroughly add water and turn till it is able to come off the turning stick or whatever you'll be using to mix the mixture. (Do not add too much water)
- 5
Place your pan or Skillet on fire and allow to heat. If it's non-stick pan just greasing with the vegetable oil is okay but if it's not then you need a little more oil.
- 6
When pan and oil is hot enough use a scoop to fry. Use the pan handle to spread the mixture right round to make it flat. Flip the Pancakes until its done. Continue with the process until the mixture is finished.
- 7
You can eat this with honey or maple syrup and tea as breakfast
