Cheesy Upma Tikki / Cheesy Semolina Cutlets

Semolina cutlets is a delicious snack which can be prepared using leftover upma or semolina. Adding a cheese cube in the middle of the cutlet makes it really tasty. It is crunchy from outside and soft and cheesy from inside. It can be a great snack which can be served in the morning or even in the evening with tea or coffee.

If you are not using leftover upma then cook half cup of semolina in 1.5 cup of water adding little salt. Let it cool down completely.

Now take upma, potatoes, onion, ginger paste, green chilli paste, garam masala, salt and coriander leaves and mix everything well. Now divide it into 15 equal portions. Take one portion and flatten it with your palms and put one small piece of cheese in the middle and cover it. Again flatten it a little with your hands. Prepare all the cutlets in the same way.

To prepare slurry, add water to corn flour. Add salt to it. Keep the slurry of flowing consistency.

Now take one cutlet and dip it in the slurry and then cover it with the breadcrumbs. Repeat the process with the remaining cutlets.

Heat some oil in a pan and shallow fry cutlets from both sides until golden brown in colour.

Serve cheesy semolina cutlets with tomato sauce or green chutney.
