Ingredients

Serves 10 servings
  • Thick sugar syrup:
  • 400 gwhite sugar
  • 300 mlwater
  • 1 tbsplemon juice
  • 1 tbsprosewater
  • Baklava:
  • 400 gpacket filo pastry
  • 250 gunsalted butter, melted
  • 2 cups (260 g)finely ground cashews
  • Thick sugar syrup, hot

    Thick sugar syrup:

    Bring the sugar, lemon juice and 300 ml water to the boil over medium heat. Cover and boil for 20 minutes until the sugar has completely dissolved and the syrup is thick. Stir in rosewater and remove from the heat.

    Baklava:

    Preheat the oven to 220ºC.

    Cut the filo pastry sheets to the size of your baking tin. Brush the baking tin liberally with melted butter.

    Layer 200 g the filo pastry sheets in the tin, brushing every second sheet with butter.

    Spread the cashews evenly over the pastry.

    Cover with remaining filo, brushing every second sheet with butter. Do not butter the top layer.

    With a sharp knife,make parallel cuts on the diagonal about 3.5 cm apart through the base of the tin, then cut on the diagonal the other way to create diamond shapes. Brush the remaining butter on top.

    Bake for 10 minutes, then reduce the temperature to 180ºC and bake for another 35 minutes or until golden.

    Remove from the oven. Pour the hot syrup over the hot pastry and leave to cool.

    Store in an air thigh container for up to 2 weeks.
