Kofta-esque Lamb Kebab Burgers with Chickpeas

Dice the onion and tomato and mix with the lamb in a large bowl

Add the ground coriander and cumin and mix well, then the diced tomatoes, chopped parsley and, you guessed it, mix well

Now grab about 1/4 of the lamb mix and shape it into a flat rectangle. Do the same with the rest of the lamb until you have 4 kebab-burgers. Sprinkle with fresh ground black pepper to taste

Put 2 tsp olive oil into a pan on a medium heat, then add the rectangles of lamb. You’ll want about 12 minutes total, turning half way when nicely browned

While that’s cooking, rinse the chickpeas and toss with the lemon juice, some fresh coriander and cumin

Make sure the lamb is well cooked, then plate it up with the chickpeas and serve.
