It was through trade organized by the English that curry gradually spread to Japan, where the Japanese consider it a Western dish rather than an Asian one.

In Japan, although there is a wide variety of vegetables and meats that can be used in curry, the most popular version is made with carrots, onions, and potatoes.

The meat used can vary between beef, pork, or chicken depending on the preferences of the residents of each city. For example, in Tokyo, it is more common to find this dish made with pork, while in Osaka, beef is typically used.

To be different, I used chicken because that's what I had in the fridge.

It is usually served with short-grain round rice (japonica variety), udon noodles, or bread.

Ingredients

  • Roux
  • 3 tablespoonsbutter (about 40 grams)
  • 1/4 cupflour (about 30 grams)
  • 2 teaspoonscurry powder
  • 1 teaspoonGaram Masala
  • 1/4 teaspooncayenne pepper
  • Curry
  • 14 ozchicken breast (about 400 grams)
  • 1onion
  • 2potatoes
  • 1carrot
  • 3 tablespoonssunflower oil
  • 1 tablespoonoyster sauce
  • 3 2/3 cupswater (about 850 ml)
  • Salt
  • Pepper

    First, prepare the Japanese curry roux. In a pan over low heat, melt the butter and, once melted, dissolve the flour while stirring constantly to eliminate its bitterness.

    Cook over very low heat for about 20 minutes until the roux turns light brown.

    Add the curry powder, Garam Masala, and cayenne pepper, and mix well. Once everything is mixed, remove from heat and set aside.

    In a pot or deep pan, place the meat along with the chopped vegetables and a splash of oil. Season with salt and pepper and sauté for a few minutes.

    Add the water and, over medium heat, cook for about 40 minutes, skimming off the fat as it cooks.

    Turn off the heat and add the roux along with the oyster sauce.

    Stir and return the pot to the heat for another 15 minutes to thicken the sauce a bit.

    For serving, cook japonica variety rice and optionally sprinkle some cilantro on top.
