Rinse the poha with water, then soak it for 10 minutes. Do not soak for too long. Drain the water using a strainer.

While the poha is soaking, prepare the other ingredients. Chop the potatoes, onions, tomatoes, cilantro, and green chili. Dry roast the peanuts, then remove the skins once cooled. In a skillet, heat the oil, then add asafoetida, mustard seeds, and curry leaves. Sauté, then add the onions and cook until they turn light golden.

When the onions are light golden, add the potatoes and sauté for 2 minutes. Then add the tomatoes and green peas.

Add turmeric powder, red chili powder, and salt. Cover and cook until the vegetables are soft.

The poha is ready. Sprinkle cilantro on top.

Mix in the roasted peanuts and lemon juice. Serve the hot Batata Kanda Poha in a serving dish.
