Arbi ki Sabji is a delicious Indian curry dish and very easy recipe to make. carom seeds (ajwain) are added in the dish, that is makes it tastier and the seeds also are helpful in its digestion. It is also a good source of fiber, protein, phosphorus, calcium, iron, vitamin A, vitamin C, thiamine, riboflavin, niacin and folate.

Wash the Taro roots or arvi nicely with clean water 2-3 times, Then add arbi and 1 cup of water in a cooker, then boil it.

Peel the boiled arbi and cut it into small round slices.

Add oil in a pan and heat it, after the oil is hot, add carom seeds, when the carom seeds are starts crackling, reduce the heat.

Now add turmeric powder, red chilli powder, coriander powder, green chilli ginger paste and fry it for half or one minute.

Now add slices of arbi and fry for 2-3 minutes, then add 1 cup of water and cook on high to medium heat till it boil, and add salt.

Now slow the flame and cook for 3-5 minutes, if the vegetable looks thick, then add little water as per the requirement.

Now mash two or three slices of arbi with a spoon, so that the vegetable gravy will get a little thick.

Now mix mango powder/lemon juice and stir it, then turn off the flame and add chopped green coriander.

Chatpati Rasedaar Arbi without onion and garlic is ready to serve, serve with roti or paratha.
