Steps

Wash then wrap eggplant in alluminum foil. Then cook in oven until the skin turn dark brown or eggplant is soft.

When it is done peel off skin and place in a plate. Flatten it using fork.

Combine eggs, black pepper, salt and spring onion. Beat it then set aside.

Cut bacon into small pieces then stir fry until crisp. Remove then add into eggs.

Mix well egg mixture then pour over the eggplant.

Heat wok add oil then fry eggplant in a medium heat.

Flip over to cook the other side.
