Simple roast mackerel + potatoes
Made this simple Med-inspired lunch with @eliegianni. Healthy and delicious.

Preheat the oven to 200°C.

Peel and slice the potatoes, roughly 1/2 cm thick.

Drizzle a baking tray with a little olive oil, then use a potato slice to rub the oil over the tray evenly.

Arrange the potatoes in a single layer in the tray.

Crush the unpeeled garlic with the flat edge of your knife, and add to the tray. Season with salt.

Cover the tray with greaseproof paper or foil. Place the tray in the oven and cook the potatoes for 20-30 mins or until tender.

Remove the tray from the oven and place the mackerel on top.
Slice the lemon and place in the fish cavity. Place the remaining lemon slices in the tray. Season all over with salt and pepper.

Return the tray to the oven for another 20 mins (uncovered) until the mackerel is cooked. The flesh should be opaque and give easily when poked with a knife. Serve immediately!
