This recipe was adapted from the one on the back of the box of "Edward & Sons Organic Young Jackfruit Pieces" that I purchased online. Jackfruit is a great vegan replacement for a variety of meats in lots of different recipes! My non-vegan family members usually cannot tell the difference between this and shredded beef.🫣🤫 This jackfruit comes vacuum sealed and guaranteed to last unopened for over a year! Ingredients

  1. 1 (7 oz)package "Edward & Sons Organic Young Jackfruit Pieces"
  2. 2 1/3 cupswater
  3. 2 tbspoil
  4. 1/2small onion, minced
  5. 1 clovegarlic, minced
  6. 1/2 cupsliced, pickled banana peppers (or fresh)
  7. 1 cup"Sweet Baby Rays" BBQ Sauce or preferred brand
  8. Optional Toppings:
  9. Vegan shredded mozzarella or preferred cheese
  10. Vegan grated parmesan
  11. Chopped green onion or other herbs
  12. Sliced pickles

Cooking Instructions

    In a medium saucepan cover jackfruit with 2 cups water and bring to a boil. Then, reduce heat and simmer about 10 minutes.

    Next, mash the jackfruit to loosen and separate. (Shred like you would with chicken or beef.) Then, drain remaining water and add oil, onion, garlic, & peppers. Saute on medium heat until onion is translucent.

    Lastly, stir in the remaining 1/3 cup of water and 1 cup BBQ sauce. Cook until liquid is almost all gone.

    Finally, serve to desired thickness on a your favorite sub sandwich buns or any buns that you have! Add desired toppings & Serve!
