Kaddu ki sabzi (pumpkin sabzi)

Pumpkin is a very nutritious vegetable.
Rich in vitamin A it is great for the eyes specially.

Heat oil. Splutter panch phoron. Add chopped onion. Saute till translucent. Add pumpkin dices.
Put salt, turmeric powder, red chilli powder and coriander powder.
Add little water and give a nice mix. - 2
Cook at slow flame for some time. Then add chopped tomato and kasuri methi.
Give a mix. Add little water. Cover and cook at slow to medium heat till pumpkin is cooked, softened and get all the flavours. - 3
Finally add garam masala. Mix and let it be on flame for a minute or two.
Then switch the flame off.
Let it settle down for some time. Then give a nice gentle mix.
It is ready now!! - 4
Serve hot or warm..
Enjoy with rice!!
