Ingredients

10 minutes
4-6 servings
  • 100 gGF self raising flower
  • 2 tspcaster sugar
  • 1/2lemon zested (optional)
  • 1large egg
  • 150 mlsparkling water
  • Icing sugar
  • Runny honey
  • 10-12elderflower heads
  • Vegetable oil for deep frying

    To make the batter combine the flours with the sugar, lemon zest and mix. Add the egg and beat into a paste.

    Add the sparkling water and whisk to combine

    Break the elderflower heads into smaller sprays, make sure the flower heads are free of bugs, rinse under cold water and drain

  4. 4

    Place a small sauce pan over a medium high heat, fill with vegetable oil, 2-3 inches deep. When the oil is hot dip the flowers in the batter, shake to lose any excess batter, then deep fry for upto 1 minute, until golden and crisp

    Drain on kitchen roll then plate and dust with icing sugar and a drizzle of honey. Do not eat the green stalk. Only the battered flowers
