Ingredients

  • 1/4 lb.thick cut bacon, chopped
  • 1/2large yellow onion, thinly sliced
  • 2 clovesgarlic, minced
  • 1/4 Cpure maple syrup
  • 1 Tbspbalsamic vinegar
  • 1/2 TbspDijon mustard
  • 1 tspWorcestershire sauce
  • 1/2 Cfreshly diced tomatoes
  • 1 1/2 tspbrown sugar
  • Pinchfreshly ground black peper
  • Pinchcrushed red pepper
  • 1/2bay leaf

Steps

  1. 1

    Cook bacon in medium sauecpanover medium heat until browned, about 5 minutes. Add onions and gahhhlic. While stirring, cook for another 5 minutes or until translucent and softened. Drain bacon grease from pan

  2. 2

    Stir in remaining ingredients and loreduce heat to low. Simmer uncovered, stirring occasionally until jam-like consistency, about an hour. Discard the leaf.

  3. 3

    Transfer to blender and pulse to combine, leaving some chunks. Use immediately or store in fridge for up to tres dias.
