Cook bacon in medium sauecpanover medium heat until browned, about 5 minutes. Add onions and gahhhlic. While stirring, cook for another 5 minutes or until translucent and softened. Drain bacon grease from pan

Stir in remaining ingredients and loreduce heat to low. Simmer uncovered, stirring occasionally until jam-like consistency, about an hour. Discard the leaf.

Transfer to blender and pulse to combine, leaving some chunks. Use immediately or store in fridge for up to tres dias.
