Baked Red Capsicum

Vegetable prices are rising lately. The other day I saw a bag of wonky Red Capsicums at a local green grocer, and it was cheap. Of course, I bought one. Wonky Vegetables taste the same, you know. I was a little tired today and I couldn't bother doing any extra work to cook the wonky Red Capsicums. So, I simply baked them. Read the recipe below. Nothing can be easier than this, and it was delicious.
Baked Red Capsicum

I was a little tired today and I couldn't bother doing any extra work to cook the wonky Red Capsicums. So, I simply baked them. Read the recipe below. Nothing can be easier than this, and it was delicious.

Preheat oven to 220℃.

Remove seeds of Red Capsicums, and cut into chunky bite-size pieces. Place in a baking dish. *Note: I used a large pie dish.

Drizzle some Olive Oil over and mix to coat each piece with Oil. Arrange them in the dish in a single layer. Sprinkle with some Salt & Pepper.

Bake for 15 minutes, take it out, scatter some shredded Cheese, and place it back in the oven. Bake for 10 more minutes OR until Cheese is nicely golden.

Sprinkle with some Herb and extra Black Pepper if you like it. Today I added Parsley. Fresh Basil would be lovely.
