Adding herbs, garlic and butter whilst frying the steak gives a great depth of flavour. Don’t forget to bring the steak up to room temperature before cooking. About 30 minutes out of the fridge.
Steps

Remove the steak from the fridge and it’s packaging and pat dry. Allow it to come up to room temperature for about half an hour.

Cut the garlic clove in half and rub over the meat. Season the steak well with salt and pepper and then rub in a small drizzle of oil to coat entirely

Place a medium frying pan over a high heat. Using tongs render the fat until golden, then place in the pan and cook for 2 minutes

Turn over and add the garlic, butter and thyme to the pan
- 5
Cook for another 2 minutes and then for a final 30 seconds baste the steak in the pan juices.

Leave to rest for 3 minutes, the slice and serve
