Creamy Fish (with Corn, Carrots and Peas) with Dipping Bread

Ingredients

  1. White Fish fillets, sliced
  2. SqueezeLemon
  3. 2 tbspEV Olive Oil
  4. 1/4 csoup stock or 1/4 broth cube+1/4c water
  5. 2tomatoes or 1 large, sliced
  6. 1red onion, sliced
  7. 3-4garlic cloves, chopped
  8. 50 mlAll-purpose Cream
  9. Baguette or French bread, sliced
  10. 1/2 ccorn, carrots and peas, pre-cooked

Cooking Instructions

    Sauté garlic in oil until golden, add onions and keep sautéing

  2. 2

    Add sliced tomatoes and soup stock (or 1/4 broth cube and water). Cover and let simmer.

    Season fish with salt and pepper. Slice as desired.

  4. 4

    Arrange fish in pan with the tomatoes. Squeeze 1/4 a lemon around the pan. Cover and let it simmer a few minutes.

    Turn fish. Add cream. Cover for a couple minutes.

  6. 6

    Add the corn, carrots and peas. Gently move around with a spatula to mix. Cook a couple more minutes and turn off.

    Slice baguette or french bread into thin slices and heat in a toaster oven until crisp. You may butter, if desired.

    Serve with dipping bread. Or enjoy as a main dish with rice.
